Whoever knew that lamb chops could be so healthy, which at about 300 calories for a medium piece, makes losing weight enjoyable. This makes the choice between a frozen lean cuisine and gorgeous lamb chop dinner easy.
Marinate lamb chops in olive oil, rosemary, fleur de sel and pepper to taste for at least two hours, if not overnight, in the refrigerator. Bring the chops to room temperature for 15-20 minutes prior to grilling.
In an outdoor or indoor Le Creuset grill, heat until almost smoking. Use the olive oil and seasoning in the marinade to grill the chops. Sear lamb chops for about 3 minutes on one side, then turn to cook for another 3 ½ minutes for medium rare, longer to taste. Serve immediately.
