How to make Belgian Mayonnaise
Prep/Cook Time: 15 minutes
Add the lemon juice, egg yolks, mustard and cold water into a large mixing bowl.
Whisk together until thoroughly combined.
Very slowly, pour in the vegetable oil a drop at a time whisking vigorously after each drop of oil. A hand blender can be used if necessary. Be patient as adding the oil too quickly will make the mayonnaise curdle.
Continue adding the oil and whisking until the mixture starts to thicken. If the mixture becomes too thick, add a little extra cold water.
Stop whisking when the mayonnaise mixture is thick, white and creamy. Season with salt and pepper according to taste.
Keep your homemade mayonnaise in a covered container in the fridge where it will keep for up to two days.
Don’t forget that if you are planning to leave your raw egg mayonnaise out at room temperature for a meal or buffet, it can only be left out for a maximum of two hours.
This Belgian mayonnaise base can also be used to make other sauces such as garlic mayonnaise by using olive oil and adding crushed garlic or, for an extra spicy kick, add a splash of Tabasco.
