Since this is a pretty glamorous issue, we thought we would revisit caviar. Because why not? Caviar, yes, is still a luxury, but it’s a luxury within reach. Also, there are California- and Uruguay-based caviar companies that rival their Caspian Sea cousins. Here’s the list.
Roe
Roe is our go-to brand to gift, because we received it once and loved it. The packaging makes it a fun gift, where there are blini and potato chip add-ons. Also we really liked the caviar key it comes with. It’s a nice host gift or gift to yourself. The only downside is the cost of shipping, which is around $50 in the U.S.
Where it’s from: Roe is sustainably farmed by aquaculture in California.

Black River Caviar
The distinction of Black River is it’s farm to spoon. It’s the caviar that you know is fresh and also looks pretty when you open it up. We like this caviar as it’s a crowd-pleaser for home dinner parties. And if you’re a baller, for cocktail parties where guests can help themselves. Of course their higher tier within the line, the Master Selection, is the best of all. However, for everyday caviar (if that’s your thing) the entry-level Royale Selection won’t break the bank at around $92 for 20 grams.
Where it’s from: A beautiful farm in Uruguay. Anyone who has ever been to the countryside of Uruguay at least first with the idea of moving there.

Kolikof Caviar
We have this one on our list because we are obsessed with Chef Miles Angelo at Caribou Club. He makes the most impossibly dainty canapes, many of which are caviar-based. Yes, we stalked his Instagram page to find out who his guy is for caviar. And lately it’s been this brand. They are also served on Air France and at the Four Seasons. So they’re as decorated as it comes.
Where it’s from: Russia. Enough said.

Aquatir Caviar
If there’s a scientific approach to caviar, it’s the Aquatic method. Their caviar is made in a lab-like facility and sourced in sturgeon farms from Moldova. Their process uses only salt and no preservatives, antibiotics or GMOs. So while there’s technically no such category as an “organic” caviar, this is close.
