In a large bowl, beat eggs, milk, vanilla, and lemon zest. In a separate bowl, add sugar, salt, and flour and mix well. Add dry ingredients to egg mixture and mix until smooth. Cover with plastic wrap and refrigerate for 30 minutes.
Heat an 8-inch crêpe or nonstick pan to medium-high. Add enough melted butter to just coat the pan. Add 1/4 cup batter to pan and swirl. Cook for 50 seconds and flip. (Palacinke will be light golden color.) Cook an additional 30 seconds and place on plate and cover with foil to keep warm. Repeat process with rest of batter. Serve with your choice of jam, chocolate, or whipped cream filling.
