Wooden cutting boards are elegant and decorate a kitchen beautifully; however, when you cook frequently and use them often, they’re not the most practical. For the hectic pace of the holiday cooking season, we prefer to use plastic – they’re lighter and, since they can be thrown in the dishwasher and doused with bleach, are more sanitary after cutting raw meat and seafood. Our favorite size is 12’’ x 18’’, which gives us plenty of room. Since they’re inexpensive (most retail for under $25), we have a few at our disposal.
